On Friday, August 3rd, 2018, we will release the next batch of Kestrel, our gose that has been aged for two months in a tequila barrel.
As Summer tails off and we ramp up work on our Hutchinson and Mission taprooms, we are updating our open business hours.
Beginning August 1, our open hours will be:
- Friday, 1PM to 6PM
- Saturday, 10AM to 5PM
We do not anticipate our hours changing again until the taprooms are complete and ready to open. When that time comes, we’ll make further announcements to help everyone know when you’re able to come have a beer with us.
Since day one of our brewery planning, Pippin and I have planned on building two breweries; one in Hutchinson where he lives, and one in the Kansas City area, where I live. I’m happy to say that it’s finally happening!
As of July 1st, 2018 we have taken possession of a location at 5612 Johnson Drive, Mission, KS. Right in the heart of downtown Mission!
This second location will operate as a nano brewery and taproom, providing us an outlet for bringing our beer to the Kansas City market while also giving me the opportunity to do what I love: designing and tweaking new beers that are complex, easy-drinking, and locally made.
Our aim is to create a family friendly environment for community gathering. Our hours and aesthetic will reflect this, focusing on a clean and cozy space that encourages conversation amongst friends and strangers alike.
As a small space, Mission will be our testing ground and predominantly offer draft-only beer. However, we will also bring in our specialty, barrel-aged beers from Hutchinson for enjoyment on-site and available to go from time to time.
Over the next three to six months we will be completely renovating the space, building the brewery, and designing the experience. Permitting and buildout dependent, our aim is to open the doors by the end of 2018.

A new variation of our Berliner-style Weisse, Chickadee is being released in 4-packs of 16oz cans on Friday, June 29th!
Several months ago we brewed Chickadee and then fermented it directly in aa oak wine barrel. We then let it mature slowly in oak, developing a soft and bright acidity that’s more complex than a typical quick-sour fermentation.
After a few months we racked the beer out of oak and onto peach purée from Oregon Fruit Products.
The resulting beer is luscious, with loads of peach aroma and flavor that pairs perfectly with the tartness of the base beer.
Peach Chickadee is being released in 4-packs for $16 each. No growler fills this time. A handful of 4-packs have also been set aside for Can Reservations.
As a small brewery, we have the opportunity (and pleasure) to experiment a lot. Over the next year, we aim to release a wide gamut of different beers, in particular variations of our core lineup.
The first of these variations releases today and on through the weekend!
We took Chickadee, our beloved Berliner-style Weisse sour wheat beer and fermented it in an oak wine barrel for two months. Once the beer was ready we racked it to a stainless steel fermenter and dry-hopped it with Wakatu, a New Zealand hop that’s known for it’s floral and fruity characters.
This wine barrel Chickadee is available to-go today for growler fills and 4-packs of 16oz cans. The price is $16 per 4-pack, plus taxes.
We have also set aside ten 4-packs for can reservations! Can reservations are a great way for you to get ahold of our beer when you live outside of Hutchinson.
Starting on Friday, May 25th we will have cans of Junco and a Tequila Barrel Gose for to-go at the brewery!
Junco is our New England IPA, which is bright and tropical IPA with a soft and smooth mouthfeel. Per the style, it emphasizes the tropical fruit character of the hops rather than bitterness.
Previously Junco was only available in mixed four-packs but batch two will be sold in four-packs.
The Tequila Barrel Gose is our first oak-fermented beer to be released. A Gose is a sour, wheat beer brewed with Coriander and sea salt. This beer was brewed on March 23rd, 2018 and was fermented directly in a fresh Tequila barrel, where it sat for the next month and a half before packaging.
A limited quantity of both beers are available, starting today, for can reservations online. Simply visit the following page to reserve four-packs. Reservations are limited to one per beer per customer.

The last few weeks have been a busy time for our little brewery! After getting licensed in late February we have steadily been filling oak barrels with mixed-fermentation sour beers, brewing year-round beers, stocking up equipment, and fulfilling first keg orders.
We have also been testing out a small canning system that enables us to package 16oz cans of our year-round beers. It’s small and only does one can at a time but it helps us get beer into your hands sooner and in better packaging than growlers or bottles. Continue Reading
